Profil aromatique et gustatif :
Les vins issus du Carcajolo Nero sont souvent colorés, avec une robe intense et profonde. Ils développent des arômes de fruits noirs mûrs (mûre, cassis, myrtille), de violette et parfois des notes épicées (poivre, réglisse). En bouche, ils offrent une structure tannique équilibrée, une belle acidité et une texture soyeuse.
Utilisation dans l’assemblage :
Le Carcajolo Nero est rarement vinifié seul. Il est souvent assemblé avec des cépages locaux corses comme le Niellucciuou le Sciaccarellu, contribuant à des vins rouges harmonieux, élégants et bien structurés.
Ce cépage confidentiel fait partie des variétés autochtones remises en avant pour préserver le patrimoine viticole insulaire et offrir des vins typés et authentiques.
